Cillian is the name of my starter, he’s very active and reliable . Once you receive your starter you must feed it. The feeding should be done once a week.
You will remove 1/2 cup of starter from your package and add it into a large jar because it will double/triple in size once it starts to grow. You will feed you starter with 1 cup flour and 1/2 cup slightly warm water. If the water is too hot you may kill your starter. So please check the water temperature before adding to your jar of starter. If you are not sure about the temperature mix the 1 cup flour and 1/2 warm water in a very clean bowl first, it should cool down enough before adding to your jar. Mix the flour and water mixture into your starter the jar . The starter will be thick once mixed with the 1 cup flour and 1/2 warm water. Please remember not to use hot water. To store your starter keep it in the fridge, you can feed it once a week if it’s in the fridge but if you keep it out on the counter you will need to feed it every day especially in the summer months. You may use your starter 6-12 hours after feeding it, do the float test if you’re not sure. Make sure to feed your starter after each use.

What is a sourdough starter?
“A sourdough starter, also called levain, is a fermented dough filled with natural, wild yeast and a bacteria called lactobacilli. The starter is what makes sourdough bread rise. Instead of using active dry yeast like in other bread recipes, sourdough bread uses a starter.”
